parmesan baskets

1 packet of grated parmesan
a large handful of salad leaves
8-10 cherry tomatoes
15 broad beans
2 tbs of dressing
2 glasses with a base diameter of about 4cm


serves 2


1. Heat the grill to very hot and turn the glasses upside down.
2. Line a baking tray with greaseproof paper.
3. Make two 10 cm circles of grated parmesan. Press the parmesan down flat.
4. Wait a minute or so but don't take your eyes of the parmesan. Take them out when they are beginning to brown around the edges.
5. Very quickly slide the circles off the tray with a cake slice, flip them over and press them over the glasses. Don't worry if they look a bit rustic, when they cool they'll look even prettier!
6. Mix together the salad, cherry tomatoes and broad beans. Then spoon into the baskets when they are cool.
7. Dress with dressing just before you serve.  Don't add salt, the baskets are salty enough.  
  • Serve as an appetizer or with a large bowel of pasta!
