avocado + basil ice-cream

700 g avocado pulp
180g sugar
150g yogurt
30g basil leaves
200 ml cream

Serves 6

1. Chill your ice-cream maker.
2. Warm the cream on the stove and add the sugar. Stir until the sugar is dissolved. Do not let the mixture boil.
3. Let the mixture cool.
4. Finely chop the basil leaves.
5. Add the yogurt to the cooled mixture and stir.
6. In an electric mixer, whizz together the avocado and finely chopped basil until it becomes a smooth paste.
7. Add the avocado and basil to the cream mixture.
8. Pour into your ice-cream maker and churn – about 45 minutes.
9. Serve with vanilla ice-cream. Share on Facebook
