raspberry, blackberry + pistachio brittle

Handful of raspberries
Handful of blackberries
Pistachios - chopped finely
200g good quality dark chocolate



1. Take a baking sheet and line with greaseproof paper.
2. Melt the chocolate over simmering water. Heat slowly.
3. When the chocolate is melted, pour over the greaseproof paper and smooth with a butter knife.  Pop the fruit randomly into the chocolate and then sprinkle with pistachios.
4. Place immediately in a cool place to harden.  You can put it in the fridge.
5. When hardened, break into large pieces and arrnage on a flat serving dish.

  • Perfect to serve with coffee after supper!
